Broken eggs
A twist on a Spanish recipe known as ‘Huevos rotos’ or broken eggs in English. This is a cheap, easy and tasty recipe perfect for the weekend!

Cooking instructions
* Step 1
Cut the potato into 1/2 cm slices and add to a simmering salted water to blanch. Cook for 2-3 minutes, drain, rinse and set aside
* Step 2
Halve and slice the onion into 1/4 cm slices and add to medium-large frying pan with a good drizzle of olive oil. Fry on a medium heat until starting to soften, season then add the potatoes
* Step 3
Stir and fry until the onions start to caramelise, sprinkle with the smoked paprika, stir to coat.
* Step 4
Break the eggs into the pan from an arms length above the pan so that they break
* Step 5
Place under the grill until the eggs are cooked to your liking and enjoy
