Methi Dry Friuts Laddoos

Cooking instructions
* Step 1
Grind fenugreek and soak in 1cup of milk for 8 hours
* Step 2
Heat 1/2 cup ghee and add soaked fenugreek mixture. Fry on low flame for 20 minutes till it releases ghee
* Step 3
In another pan, heat 1cup of ghee and fry edible gum. When the gum pieces puff up on medium flame, remove in one plate
* Step 4
In same ghee add almonds, walnuts, cashews, pistachios one after other and fry till they become crispy and golden in colour. Remove in a plate.
* Step 5
Now heat 1 cup of ghee in the pan. Add wheat flour and fry on low flame till it turns pinkish in colour and turn aromatic. Add dry date powder and dry ginger powder and fry. Remove the mixture take in a plate.
* Step 6
Mix fried wheat flour and fried fenugreek powder together.
* Step 7
In a pan heat 1tsp ghee. Add jaggery pieces and 1tbsp water. Heat and mix till jaggery melts and becomes bubbley.
* Step 8
Grind fried nuts and gum in a food processor or mixer grinder.
* Step 9
Add fenugreek and wheat mixture into nuts and grind it.
* Step 10
Add jaggery syrup and grind again.
* Step 11
Take lemon sized portion and shape it in to laddoos. Make all ladoos while the mixture is little hot.
* Step 12
35 to 40medium sized healthy ladoos can be made in this quantity. These laddoos have shelf life of about 1 month.
