Leek and Potato soup
Is not a Recipe that I have made up.The Recipe is from a soup Cook Book that I bought in 2020 the Nutri Ninja Recipe Book 30 Delicious Soup Recipes - Liana Green.The potato is a main ingredient,rather than a thickener this time.If making on a TV Cookery Show will need One hour - need about 25 minutes too cool the cooked soup before adding to the Blender.The vegetables take time to prepare as well and a homemade Vegetable Stock,or Chicken Stock,may prove better than a Stock from shop bought Stock Cubes.The timing is based on the homemade Vegetable Stock already been made,am not sure if my homemade Stock is Vegetable Stock,or Chicken Stock - I don't think it matters,a vegetarian may demand that a Vegetable Stock be used.

Cooking instructions
* Step 1
Heat the oil in a medium saucepan and add the chopped onion and 1/2 of the finely chopped leek.Cook gently for about 10 minutes until the onion is soft.
* Step 2
Chop up the potatoes and add to the saucepan.Cook for a further 3 minutes,stirring continuously.
* Step 3
Add the water and bring to the boil.Cover the saucepan and simmer for about 10 minutes (or until the potatoes and leek are soft).
* Step 4
Allow the contents to cool to room temperature.
* Step 5
Pour the contents into the Nutri Ninja and blend for about 30 seconds or until smooth.Add more stock or hot water if required.
* Step 6
Pour back into the saucepan and add the remaining chopped leek.Cook on a gentle heat for about 10 minutes,stirring often.
* Step 7
Add in the cream and milk and stir whilst reheating gently.
* Step 8
Season with salt and pepper if required.Serve.
