Prawn and Quinoa
This is a very quick and easy one pot recipe which is great. Quinoa sure is the girl she thinks she is. She rules my cupboard.
Cooking instructions
* Step 1
On medium heat, fry onion and garlic till soft. Add chilli flakes and and then add quinoa and sauté for a minute.
* Step 2
Add vegetable broth, bring to the boil and then simmer covered for 20-30 minutes or till cooked. Halfway through add the prawns and cover.
* Step 3
Add parsley. Season with Salt and Pepper and serve hot.
