Yiayia’s Greek cheese pies
The mother-in-law always makes these on our last day in Greece, enough for breakfast and on the plane home
Cooking instructions
* Step 1
Mix yeast, luke warm water and sugar to activate the yeast. Leave for 5min
* Step 2
Add oil and salt, then add flour. Bind together. Add more water if needed. Need the dough then leave to prove for 30min
* Step 3
To make cheese mixture, beat the eggs and crumble the feta into the eggs
* Step 4
Split into 12 table tennis sized balls and roll each out into 15cm circles
* Step 5
Put equal amounts of cheese mixture on each piece of dough. Spread the mixture out over half of the disc
* Step 6
Fold over the other half and crimp with a fork
* Step 7
Shallow fry in vegetable oil until golden.
