Boiled dressing

Ingredient

3 tbs

sugar

1 tbs

flour

1 tsp

salt

1/2 tsp

dry mustard

1/8 tsp

red pepper

1 tbs

butter

1/2 cup

vinegar

1/2 cup

water

Cooking instructions

* Step 1

Mix the dry ingredients, then add the butter, vinegar and water; cook in double boiler over until smooth

* Step 2

Beat the yolks

* Step 3

Add the hot mixture very gradually To the yolks, stirring constantly.

* Step 4

Cook in double boiler until mixture thickens, stirring constantly.

* Step 5

When ready to serve, add a little cream or lemon juice to thin it.

* Step 6

NOTE: to make it with oil, beat I 1/2 cui oil with a rotary beater. It will not separate.
