Potato veggies soup is delicious, tasty, healthy easy to make soup. Just add in your choice of veggies and get a great healthy tasting flavorful soup just in mins. Course:soup, diet: vegetarian, nutrition value: vitamins: A, B,C, K, folate

Cooking instructions

* Step 1

Rinse the veggies thoroughly and chop them finely, keep aside, chop ginger 🫚and garlic πŸ§„.

* Step 2

Heat butter 🧈 in a soup pot, add bay leaf πŸ‚ saute for 1 sec, add chop garlic πŸ§„ cook till golden, add chop ginger 🫚 saute for 1 sec, then add spring onions (white) for 1 min, add all veggies (whole baby potatoes πŸ₯”, carrots πŸ₯•, french beans, cabbage shredded, peas πŸ«›, spinach/ baby spinach πŸ₯¬, spring onions green) saute for 2 mins on high flame.

* Step 3

Add black pepper powder, salt πŸ§‚, mix well. Pour in vegetable stock cook until veggies are slightly tender, add apple cider vinegar, mix well. Stir corn flour in water mix well, pour in the soup, let it boil, cook stirring constantly until it turns slightly thick, remove from the oven and serve hot with sandwich or cheese toast.

* Step 4

Garnish with red cabbage, red chilli flakes🌢️, parsley 🌱
