Mediterranean mixed beans salad

#GoldenApron23#week6, a healthy, easy to make, ready in 10 mins and perfect as side dish, lunch or for main course. Fresh and colourful delicious salad with Mediterranean flavor, enjoy will grilled dishes like fish, chicken.

Cooking instructions

* Step 1

Drain the tin of white beans and rinse well, keep aside. If using boiled white beans, first soak them overnight, boil and use as required.

* Step 2

For dressing: in a bowl πŸ₯£ add lemon juice/ red wine, olive oil, sprinkle in the salt and mix well. Keep aside

* Step 3

Add the diced onion πŸ§…, green bell pepper πŸ«‘ diced, cucumber diced, cherry tomatoes πŸ’ cut into quartered/ chopped tomato πŸ…, finely chopped red chilli, finely chopped green chillies, boiled/ canned white beans, boiled red kidney beans, chopped parsley/ dill, small cubes of mozzarella cheese πŸ§€ and gently mix well. Pour the dressing and mix well

* Step 4

Check salt or add according to your taste, serve or rest for 25 mins before serving. Garnish with black olives & fresh finely chopped dill
