Chicken and red pepper stir fry with courgetti noodles

Chicken and red pepper stir fry with courgetti noodles

Another super quick inflam-friendly option that can easily be adapted for the whole family. Double or triple up the veggies, replace courgetti with regular noodles, use beef or pork instead of chicken and just remove a delicious inflam-busting portion for yourself before adding a ton of soy, oyster or sweet chilli sauce for the rest of your gang. Easy peasy.

Cooking instructions

* Step 1

Heat coconut oil in a wok or pan over a medium heat

* Step 2

Add all the spices, miso paste and spring onions to the pan and stir fry for 2 mins

* Step 3

Add chicken and stir fry for a further 2 mins until chicken has a decent bit of colour on it

* Step 4

Add red pepper and rest of whatever veggies you are using, toss everything together and stir fry over a med-high heat for around a further 5 mins

* Step 5

Add dash of tamari, stir it through, empty wok or pan into a bowl, and set aside

* Step 6

Quickly put wok or pan back on the heat, add courgetti and toss through for 1-2 mins until just starting to wilt

* Step 7

Plate up! Either pile chicken, red pepper and veggies on top of your courgetti or go side-by-side like mine. Scatter some sesame seeds and you are done!
