Vangi bhat with vangi kaap

Cooking instructions

* Step 1

Heat oil in to a pan add mustard seeds, sesame when it cracles add curry leaves, onion and saute till light brown then add Brinjal, turmeric powder, chilli powder, ginger and garlic paste, Asafoetida, garam masala, tamarind pulp, jaggery, salt and mix it then add water and stir 1 minute then add cooked rice, coriander, coconut, peanut powder and mix it well

* Step 2

Switch off the gass

* Step 3

For vangi kaap :- wash and dry Brinjal and cut into round shape then it marinate with salt ready chilli powder, asafoetida, turmeric powder and take a rest for few minutes

Then marinated slice coat in to semolina / rice flour / breadcrumbs

Heat oil into a pan and shallow fry it till brown colour and crisp
