Vegan Spicy Chickpea "Tuna Salad" Sandwiches
This is almost exactly how I make my tuna salad! Aside from using tuna meat instead of chickpeas, the only other difference here is the vegan mayonnaise. When I am not preparing vegan I prefer to use miracle whip but I also use regular mayonnaise as well. For this recipe, I used canned chickpeas for convenience, but if you have chickpeas cooked from scratch that works, too. I love that you can use this for so many different things. The spicy is a personal preference and of course can be optional. Red grapes can also be substituted with green grapes, raisins, or even cucumber! Cooking instructions
* Step 1
First, drain your chickpeas & rinse. Place them into a mixing bowl. Smash the chickpeas with a fork or potato masher. (You don’t have to mash them all, a few left whole or partially whole is great for texture.)
* Step 2
Next, dice the celery and green & red onions. Add to mixing bowl with smashed chickpeas.
* Step 3
Then, add all your seasonings. Also, add mustard, relish, & chili garlic sauce if making this spicy. (Or any ingredient that you prefer to add the heat and make this spicy to your preference.) Finally, add vegan mayonnaise & preferred seed. Mix all ingredients well.
* Step 4
Lastly, cut grapes into halves or quarters and fold into the chickpea mixture.
* Step 5
Serve on toasted bread, soft bread, crackers, salads, & More! Enjoy!
