Roasted broccoli & zestie garlickie grains
Great side dish or work week lunch & can be served hot or cold. Adpated from Thug Kitchen recipe.
*If you dont want to make the dressing you can use a premade/store bought spicey italien or vinagrette.
Suggest to experiment adding roasted carrots, zuchinni, red onion or bacon. Also consider adding leftover shredded chicken and diced ham.
Cooking instructions
* Step 1
Dice broccoli to about size of your thumb
* Step 2
Toss in 1tblsp oil, cayene, & cumin then spread in single layer on cookie sheet
* Step 3
Roast in preheated 400 oven for 20 minutes
* Step 4
Cook 1 cup of grains per directions on package...usually bring to boil then simmer for 20 minutes.
* Step 5
Smash garlic, squeeze in lemon juice, garlic salt, pepper and mix...add oil and ensure it is all encorporated together.
* Step 6
Toss grains and garlic dressing lets sit for 5 minutes mix in broccoli then serve warm or cold.
