"I only like quinoa in this" recipe

I dont usually prefer recipes with quinoa but this one is really tasty & healthy. My sister and my partner also found this recipe delicious. It's completely made up but inspired from food chain called Pure in the UK.

Ingredient

1/2 cups

quinoa

1/4 cups

peas

1/2 bag

pea shoots

2 scoops

hummus

2 tbsp

mustard

1 tbsp

honey

Cooking instructions

* Step 1

Boil quinoa: 1 cup of water for 1/2 cup of quinoa. It takes about 25 mins to prep this.

* Step 2

In another pan, drizzle olive oil and stir the cauliflower florets. Once florets are cooked throughly, add carrots. I like to slice carrots very thin as halfmoon shaped. Add some cumin and splash of water. Then add the peas, you can add frozen peas too. Close the lid to let veggies soften. * I like cumin because it adds some kick and enhances the flavor of the veggies.

* Step 3

Start chopping pea shoots, cucumber and nectarine.

* Step 4

To prep the salad dressing: Add mustard, vinegar, lemon juice and salt. Keep stirring until you have a homogenous mixture.

* Step 5

I simply fried the eggs and add some chili flakes.

* Step 6

Prep and style your bowl as you like once all the ingredients are ready. I recommend pouring the salad dressing on quinoa, pea shoots. This salad dressing is a gamechanger for quinoa!!
