Turkey empanadas

These turkey empanadas are exquisite. The turkey filling is excellent. They are delicious empanadas to get out of the routine of empanadas stuffed with beef.

* Step 1
Preparation for the filling
Heat a pan with olive oil and fry the garlic with the onion together.
Add and sauté the peppers.
Add the spices, turkey and cook for 2 minutes without burning the spices.
Incorporate, tomatoes and tomato sauce. Heat well, add a little more salt if necessary and let cool off.

DOUGH PREPARATION
In a bowl mix the turkey broth with the salt, white wine, vinegar and beaten egg.
In a large bowl put the flour and with the help of your fingers cut the butter in the flour so that small lumps form. Add the turkey broth mix and knead enough to form a ball. Place the dough in the refrigerator for about 1 hour to cool off, but do not let it to harden.
Make 16 balls.
With a rolling pin stretch the dough forming discs of approximately 6 inches diameter.

FILLING THE EMPANADAS
Place the dough discs on the table.
Distribute the filling by putting it in the center of the discs.
Put a piece of egg and one olive on each disc.
With a brush smear a little water on the edges of the discs.
Close the discs forming a half-moon.
Fold the sides forming an envelope.

With the brush spread the beaten egg on top of the empanadas.
Preheat oven to 232° C. / 450° F.
Bake the empanadas for about 25 minutes or until golden brown.
If you wish, you can also fry the empanadas as an option.
