Pumpkin Spice French Toast mini bake
Don't like pumpkin? You can omit the pumpkin and the spice or mix it up, try different varieties of this recipe. Use different spices like cinnamon. Add diced peaches or apples instead of pumpkin. Try diced bananas and walnuts. Add a crumble topping: mix 1tbs flour, 1tbs butter, and 1tbs brown sugar.

* Step 1
Preheat oven to 400°
Spray mini loaf pan with cooking spray
* Step 3
In a bowl, mix egg, shake, pumpkin pie spice, and pumpkin puree. Pour over bread and let soak for 5 minutes.

Sprinkle brown sugar on top and bake for 25 minutes.
* Step 5
Add a drizzle of syrup and enjoy!
