Garlic chive pancakes (chijimi)
This is a classic recipe for garlic chives, so if you've never used them before, give it a try! It's quick and simple to make. Dip in soy sauce, the sweet tobanjan miso dip below, or any other Asian sauce/dip you like.

Cooking instructions
* Step 1
Using a whisk, mix flour, salt, egg, and stock or water in a large bowl.
* Step 2
Wash garlic chives and cut into 1-2 cm pieces.
* Step 3
Add to batter and mix with a big spoon.
* Step 4
Heat up a frying pan on medium. Add a little oil to the pan and coat the surface.
* Step 5
Fry up the pancakes similarly to regular pancakes: add enough batter to the pan for the size pancake that you want. I like to make one big one with all of the batter, but it can be hard to flip. Make 2 or 3 smaller pancakes for easier flipping or if you don't have a big frying pan.
* Step 6
Once the bottom is getting golden brown and the top isn’t too runny, flip the pancake and finish cooking in the other side. If you're doing one big pancake, it helps to have two spatulas for flipping.
* Step 7
Once done, remove from pan to a cutting board and cut into pieces.
* Step 8
For the sauce, just mix all the ingredients together in a small bowl and it’s ready!
* Step 9
Serve with the dipping sauce and/or soy sauce!
