Cooking instructions

* Step 1

Preheat oven to 200 c

* Step 2

Combine olive oil garlic lemon juice mixed herbs salt and pepper in a small bowl and whisk

* Step 3

Thread eggplant tomatoes capsicum and paneer onto skewers

* Step 4

Place skewers onto a baking sheet brush olive oil mixture onto the skewers and let sit for 10-15 minutes

* Step 5

Place into oven and roast for 10 minutes or until tender

* Step 6

Serve immediately garnished with parsley
