Tortang Talong (Filipino Eggplant Omelette)

Tortang talong, also referred to as eggplant omelette, is a dish originating from Filipino cuisine. It involves pan-frying grilled whole eggplants that have been dipped in an egg mixture, resulting in a flavorful omelette or fritter. This dish is widely enjoyed as a popular choice for breakfast or lunch in the Philippines.

Cooking instructions

* Step 1

Boil eggplants until soft or roast in the oven until brown at 450 degrees. Season with salt and pepper

* Step 2

In a skillet, heat oil and sauté garlic, onions, and tomatoes. Add ground pork and cook until brown. Season to taste. Add two eggs and blend well.

* Step 3

Divide the mixture into 2 and spread over the eggplants. Coat with more beaten egg then cover with flour/breadcrumbs. Fry until set and golden brown. Ready to serve!
