Great Northern beans with noodles and smoked ham

This is a traditional soup very popular in Chile. This soup is made with beans and spaghettis or beans with long pork skin threads that resembles the horse reins. Is very popular to serve it with longanizas (sausages), chorizos or chicharrones (fried pork skin). In this case I made it with hickory smoked ham left over from New Year’s celebration.

Cooking instructions
* Step 1
Check beans for foreign objects, like small stones, and wash it. Place the beans in a large pot and cover with cold water. Let it soak overnight.
* Step 2
Next day, drain it and add 2 quarts of water, salt and bay leaf. Bring the liquid to a boil. Remove the foam that appears on top. Reduce the heat, cover the pot and let the beans to cook until are soft, around 45 minutes.

Measure and cut ingredients

In another large pot heat up the oil and sauté the onions and garlic together until the onions looks transparent.
Add and sauté the rest of the vegetables until start browning a bit.
Cover and sweat the vegetables to brown it.
Incorporate the ham, oregano, ground cumin and cook for a couple of minutes.
* Step 5
Add the beans with the liquid, bring it to a boil. Add the pasta and cook for a few minutes until the pasta is cooked al dente.
* Step 6
Sprinkle chopped cilantro or parsley on top of the soup and serve.
