Chicken Quesadillas
This doesn’t look anything like last nights chicken😂 I deboned some roasted chicken and used some random stuff that needed to be used. This is a great way to make a quesadilla without losing the insides to the flip.

Cooking instructions
* Step 1
In a large skillet, add your chicken the water, the seasoning, and the bullion. Heat to a boil and help the chicken break apart. Once the chicken is soft and the water has cooked down, add the enchilada sauce and the chilis. Allow to cook down some and thicken. Set aside.
* Step 2
In another skillet, add some oil to fry the quesadilla. Prepare your quesadilla in this order to near the edge of the tortilla: tortilla, sour cream spread thinly, shredded cheese, chicken mixture, shredded cheese again, cheese sauce spread thinly on top tortilla. Sandwich and press down. Heat the oil on medium high. Place your quesadilla in the skillet and fry for a couple of minutes. Once browned and crispy, gently flip with a spatula. Fry the other side until crispy. Cut into 4 pieces.
