Egg-Free! Fluffy! Tofu Pancakes!
I wanted to try making a tofu pancake myself since they have been so trendy as of late.
Ahh!! But I didn't have an egg! I tried making one anyway with what I had on hand, it turned out really delicious.
Cooking instructions
* Step 1
Mix all of the ● ingredients together with a whisk in circular motions.
* Step 2
Next, mix all of the ○ ingredients together. Keep mixing well until the batter is smooth.
* Step 3
Now mix all the dry ingredients from Step 1, into what you made in Step 2 and mix until only slightly lumpy.
* Step 4
Heat up some vegetable oil in a frying pan. Next place the heated frying pan on top of a damp cloth for three seconds and then return the frying pan to the burner.
* Step 5
Pour the dough into the frying pan in a circular motion, cover with a lid, and then cook on low heat. Once bubbles form on the surface, flip it over. Once puffy and fluffed up, they are done.
* Step 6
Cook the rest of the dough! Top with butter and maple syrup if you have it! This doesn't use any eggs but it's still really fluffy.
