Pork Belly Filipino Adobo

Adobo is a popular dish in the Philippines.

Cooking instructions

* Step 1

Marinate the Pork: • In a large bowl, combine the pork, soy sauce, and half of the minced garlic. Marinate for at least 30 minutes, but preferably for a few hours or overnight in the refrigerator.

* Step 2

Sauté Aromatics: • Heat the cooking oil in a large pot or deep skillet over medium heat. • Add the chopped onion and sauté until it becomes translucent. • Add the remaining minced garlic and sauté until fragrant.

* Step 3

Cook the Pork: • Add the marinated pork to the pot and cook until it starts to brown. • Pour in the marinade, making sure to scrape any bits from the bowl into the pot.

* Step 4

Simmer: • Add the vinegar, water, bay leaves, black peppercorns, and sugar (if using) to the pot. • Bring to a boil, then reduce the heat to low and let it simmer uncovered for about 45 minutes to an hour, or until the pork is tender and the sauce has reduced and thickened.

* Step 5

Adjust Seasoning: • Taste and season with salt and pepper as needed.

* Step 6

Pour the pineapple juice during simmer.

* Step 7

Serve: • Serve the pork adobo hot with steamed rice.

* Step 8
