Cooking instructions
* Step 1
Add half the tbls olive oil to a frying pan heat up then add the red diced onions fry for 2 minutes then add the garlic and half the oregano and Aubergines mix and cook on simmer for 3 minutes.
* Step 3
Using the veg peeler peel off strips of the courgette until you have all fine strips
* Step 4
Add the tin crushed tomatoes to the aubergine mix and the chopped Basil also parmeasan and Mozzarella cheese mix then add to an oven dish and add the courgette strips all on top across
* Step 7
Add rest of the olive oil sprinkled over and the oregano spread over the top. Add a little more diced parmeasan too.
* Step 8
Add to preheated oven 180 for 15 minutes. Thenvserve hot
