Lemon Garlic Chicken/ Mediterranean Bowls

inspired by lebanese lemon garlic chicken recipes!

Cooking instructions

* Step 1

Marinate chicken with greek seasoning, minced garlic, salt, pepper, chili pepper, lemon pepper seasoning. I left mine in the fridge for about 6 hours but this is not necessary!

Wash, peel, and chop 4-5 large potatoes and 1 yellow onion. 🥔🧅

Place chicken breasts in the middle of a pan and surround in with the potatoes and onion. Oil the potatoes and salt and pepper to taste. Place in the oven at 400 degrees.

While the chicken is in the oven, make the sauce! Squeeze the juice of 2 lemons, and the zest of 1 lemon, add 1/2 cup chicken stock, and about 3-4 tbsp of garlic (but I eyeballed it.) I added chili powder and dill to the sauce mixture too.

After about 10 mins, remove the chicken from the oven and pour the sauce over the chicken and veggies. Return to the oven and cook until chicken is fully cooked and potatoes are soft.

Chop veggies while chicken cooks.

Assemble bowls with tzatziki, hummus, feta, rice, veggies, and add potatoes and chicken. ENJOY!!!! 🧄🍋🥔🧅
