Re-Cooked Canned Kidney Beans
For Africa Day I thought I’d please my ancestors by having a common African dish that can sometimes be mistakenly thought of as a mainstay of peasant diet. But trust me, nobody actually means it! It’s just a joke we make for the absence of meat in a meal as beans are by far cheaper than meats and not even close to high maintenance (for luck of better word).

Cooking instructions
* Step 1
Heat oil in a pan on medium heat. Cook onions in oil until fragrant and translucent. Add scotch bonnet and salt, cook for a minute before adding tomato purée. Cook sauce down for a bit to mellow flavors
* Step 2
Add beans [and all can contents] and a little water. Let simmer for 5 minutes while frequently stirring to ensure beans are thoroughly warmed through
* Step 3
Enjoy with nsima or rice, or even fried plantain
