This was a satisfying cook. All worth the time and effort.

Cooking instructions

* Step 1

Whisk flour and salt. Rub oil into flour mixture. Then add water a little at a time, mixing with a wooden spoon until all ingredients incorporate

* Step 2

Transfer to a floured flat surface and knead dough until no longer sticky. Add more flour is too wet and more water if too dry. Sprinkle parsley onto dough and knead until evenly distributed

* Step 3

Dough is ready if smooth and no longer sticky. Cover and let rest for 10minutes. After 10 minutes, knead again and divide into equal sized balls (keep in mind the size of your rolled dough against the size of your pan and that should determine how big or how small you make them). Keep the rest of the balls covered as you roll one

Meanwhile brush oil onto a flat pan and heat it. Roll chapattis thin, trying as much as possible to maintain a circle

Transfer rolled dough onto hot pan and cook brown patches form on the bottom. As you wait for the bottom side to cook, brush extra oil onto the topside. Now turn to cook this side as well

Keep cooked chapattis covered with a thick cloth in an oven while you cook the rest. This will ensure that they are warm and soft by the time you eat them
