Guacamole potato salad

This is a great way to use up leftover guacamole and give a new dimension to potato salad.

Ingredient

Food ration :

3 to 4 servings

Cooking time :

20 to 30 min between cooking and assembly
1 1/4-1 1/2 cups

Cooking instructions

* Step 1

Place guacamole in a mixing bowl.

Microwave potatoes 5 to 8 minutes until you can gently pierce them with a fork. Cut in pieces while hot and add to guacamole

Chop cilantro and mix all ingredients together well. Serve immediately or cool and chill, and serve later.
