Baked Potato Raita

#ebook -44 #onerecipeonetree Had some baked potatoes from the dinner last night. No one was willing to have it again for lunch so I created this raita and we loved it. Sprinkled some smoked paprika that added to the magic. Serve it as a side dish or just have it anytime to curb the hunger pangs. Mine was served with some raw mango rice and delicious cauliflower koftas.

Ingredient

35 minutes
1 cup

yoghurt

1/2 tsp

sugar

as needed

Chat masala

to taste

Cooking instructions

* Step 1

Wash the potato well. Use a knife and poke all over it. Bake it in a preheated oven at 180 degrees for 20 minutes. I had some leftover baked potatoes that I have used.

* Step 2

Cool the potato, peel it and make cubes.

* Step 3

In a bowl whisk yoghurt lightly along with salt and sugar to make it lump-free. Add potato and chopped mint leaves, reserving a few to garnish.

Transfer it to serving bowl, sprinkle cumin powder, chat masala and smoked paprika. Drizzle some tamarind chutney.

* Step 5

Garnish with mint leaves and crunchy salted boondi just before serving.
