#Win#Week10 #cookpadindia #everydaycooking An easy one pot dish for any day with Potatoes, Dill Greens and Eggplants. This Vegetarian dish can be relished with both Rice and Rotis. Made with easily available pantry staples, this is one of the most popular dish in my house. With Dill Greens or Suvaa, this is a way too lot flavourful and aromatic plus a delicious comfort food by all means. Though the preparation or the making process might differ from home to home, what matters is the taste. And it does taste yum. And with Potatoes added, you are rest assured about the flavour too. The best part is that it gets done quickly too. Absolutely delicious to the last bite. This dish is for keepsake. You will love it every bit and would want to make it more and more. At least once a Week or even twice if desired.

Cooking instructions

* Step 1

In a pan, heat some oil and add the ginger-garlic paste. Saute it for a few seconds and then add in the asafoetida and the other ingredients as well. Saute onions on low heat until done. Now add the chopped tomatoes and cook until soft and mushy. Also, add chopped green chillies and the dill leaves. And then finally add the brinjal and the potatoes both one after another.

Cover and cook on a low flame for 18-20 minutes. Do not add too much of water. Add a little to facilitate easy cooking of them. It will be done easily. If desired cook it for a little longer duration if you prefer it to be too soft. Otherwise, it is done in just about 20 minutes in all.

Relish this awesome dish well garnished with chopped coriander leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
