Healthy Vegetable Crispies
A recipe loaded with vegetables that tastes both like Handvo and Muthiya.

Cooking instructions
* Step 1
Grate doodhi, carrots, pumpkin and potatoes. Coarsely chop green peas, chillies and ginger in a chopper.
* Step 2
Take all in a big mixing plate. Add in coriander, soda, salt, haldi, chilli powder and sugar. Add in the curd and 1 1/2 tbsp oil.
* Step 3
Mix well. Ready all the flours. Add into the vegetable mixture. Do not add water to retain the softness of the final product.
* Step 4
Mix well. Grease a container with 1/2 tbsp oil. Place the combined mixture into the greased try.
* Step 5
Level it well. Place carefully into a readied steamer. Close lid and steam for 20 minutes.
* Step 6
Check after 20 minutes. If the knife comes out clean switch off gas. Take out the tray from the steamer and cool completely. Cut into strips.
* Step 7
Heat 3-4 tsp oil in a nonstick pan. Add in the mustard seeds. When it splitters, place the cut strips
* Step 8
Cover and cook on medium gas until the base side is crispy. Turn and sprinkle some roasted til for adding extra crunch and nutrition. Cover and cook other side also crispy.
* Step 9
A healthy, delicious and super nutritious dish is ready to serve.
Serve the Healthy Vegetable Crispies with a dip of green chutney and curd.
Can be served with tea also.
