Onion Jowar Paratha
A recipe made by my mother.

Cooking instructions
* Step 1
First, chop onions and green chillies finely in a manual chopper. Also chop the coriander and keep it in a separate plate.
* Step 2
Add salt to the chopped onions and mix. Rest for 10 minutes to allow the release of water from the onions. Meanwhile, ready the other ingredients-ajwain, fennel seeds, hing and garam masala.
* Step 3
Now mix all the readied ingredients and add in both the flours. Add in 2tbsp oil for 'moyan'.
* Step 4
Mix all well. If not binding use 2-3 tsp of water. If loose, add in some more flours.
* Step 5
Just bring the dough together. Do not knead. Smoothen using a little oil. Rest for not more than 5 minutes. Take a portion and gently roll out a paratha using dry wheat flour.
* Step 6
The circumference may crack because of the jowar flour. Securing the broken edges roll out paratha of medium thickness.
* Step 7
Roast the paratha as usual using homemade ghee/oil/ butter.
* Step 8
Serve hot with curd or any sabzi and pickle. I have served with doodhi-peas sabzi, curd and pickle.
* Step 9
Sunday special lunch sorted. Relished with family with a smile.
