Aam ka Murabba
A sweet pickle prepared from ripe mangoes.
This pickle gives the taste of the 'King' of fruits even in off- season.

Cooking instructions
* Step 1
Soak 80% ripened Alphonso mangoes in water for 1 hour. Wipe dry them well. Soak saffron in some water and peel the elaichi and keep ready. Peel and dice the mangoes.
* Step 2
Measure the quantity of diced mangoes using any set bowl and take it in a heavy bottomed steel utensil.Here I have 2 set bowls of mango dices. Measure and add in equal quantity of sugar i. e. 2 set bowls.
* Step 3
Mix the sugar and mangoes a bit and allow it to rest for an hour, to melt the sugar. After 1 hour the sugar would get almost dissolved.
* Step 4
Now switch on gas on high flame and stir and cook for 3-4 minutes and bring to a boil. Note not burn at the base. Now reduce the heat to medium and cook, stirring in between.
* Step 5
Now, add in citric acid. This helps to avoid the crystallization of sugar in the final pickle. Mix the saffron using a pestle.
* Step 6
Mix and cook for almost 20 minutes, until an almost 1-sring consistency of sugar syrup is achieved. Another way to check is that the syrup should not be runny.
* Step 7
One more way to check is that the mango pieces will get a bit hardened on one side. Then switch off gas.
* Step 8
On cooling, the syrup will get thicker, like honey. Cool completely and fill the Murabba in clean jars. You can store it at room temperature or in the fridge as desired.
* Step 9
Relish with roti, puri, paratha, dhokla, khakhra or bread.
