Plum Cake (eggless and no rum)

Plum Cake (eggless and no rum)

Made for my Son and DIL's Marriage Anniversary.

baking soda

1/4 cup

milk powder

1/4 cup

sugar

1/2 cup

water

2 tbsp

kishmish

2 tbsp

cranberry

Cooking instructions

* Step 1

Ready all the ingredients

Soak raisins cranberry etc in orange juice for 8-10 hours

Melt sugar in a pan on slow gas. Start mixing only after the sugar begins to melt. Now add in 1/2 cup water, in small batches and mix well.

Once homogenous and comes to a boil, the caramel sauce is ready. Keep aside to cool completely. Preheat a kadhai Or a cooker for 10 minutes on slow gas. Ready the cake tin by greasing and lining it with baking paper.

In a big mixing bowl, take oil and milk and mix well. Add in vanilla essence.

Sieve maida, baking powder, soda and milk powder into the wet ingredients. Add in the dry spice masalas.

Add in the soaked ingredients. Also add the caramel sauce. Mix light handedly only. Else the plum cake will get hard.

Add in chopped kahu and badam. Once well combined and bubbles appear, stop mixing. Transfer the batter into the readied cake tin.

Tap to remove air bubbles.Garnish as desired(but this garnish will sink during the baking process). Place the cake for baking on slow gas. Cover lid. Do not open for at least 50 minutes.

After 50 minutes garnish again with tutti fruity and bake again for some more time until the toothpick comes out clean. Take the cake out and cool on wire rack.

Then unmould the gorgeous and delicious plum cake. Flip the cake over.
