California Farm Blue Cheese Fondue Party Dinner
For a fondue dinner party with friends, we use three cheeses: cows milk aged cheddar, cows milk young gouda and home made cashew blue cheese. We dip the melted cheese with fresh baked sour dough bread, fresh apples, fresh vegetables into the bubbly cheeses in a fondue pot rubbed with elephant garlic, simmered in white wine and brandy.

Cooking instructions
* Step 1
Warm ceramic cast iron fondue pot on stovetop, rub sides and bottom with elephant garlic. Melt ghee on low heat in the fondue pot, add clove of garlic, nutmeg, mustard, and pepper, watch this bubble. Grate the cheeses.
* Step 2
Add white wine, cream and cheeses, bring wine to boil, stir till melted. Add in juice of half a fresh meyer lemon.
* Step 3
Put fondue pot on table on fondue burner. Fill heater with alcohol, light. Put fondue pot on top, bring fondue to bubbly. Add Tbs corn starch dissolved in 3 Tbs cold water, stir and scrape bottom.
* Step 4
Stir and simmer till thick, add brandy. Core and slice apples, vegetables, cube french bread for dipping. When pot runs empty, a crust will have formed on the bottom. Loosen crust, cut in 4 wedges, serve as dessert with a glass of fruit punch or cherry brandy. Enjoy.
