California Farm Meat and Sweet Peppers Dinner
Midweek dinner from any leftover beef or other meat sauteed with miniature potatoes in sweet and sour peppers in a cast iron skillet. You will feel like you are in the field, at a campfire, your horse right next to you, eating under the stars.

Cooking instructions
* Step 1
Fry 2 cloves of garlic with a tablespoon of ground pepper in unsalted butter or olive oil till foaming, add 2 cups of small young unpeeled potatoes and a chopped onion, fry till potatoes are developing a nice crust, about 20 minutes.
* Step 2
Wash, remove cores and stems, slice, 3 sweet red, orange and yellow peppers, soak in 1/4 cup water, 1/4 cup rice vinegar and Tbs palm sugar, mix with sliced leftover meat of your choice, marinade while potatoes are frying, then mix with potatoes in skillet. Fry till warm and soft, about 10 minutes.
* Step 3
Add a green vegetable of your choice, like chopped cabbage, swiss chard, or green beans and sautee till al dente, about 10 minutes. Taste, sprinkle with flaked seasalt if desired. Enjoy.
