Oat omelette for kids lunch
Oat omelettes are so easy and quick to make but oh so filling. I make these for myself all the time with all kinds of fillings but this one I made this for my toddler's lunch. Give it a go.

Cooking instructions
* Step 1
Beat together two eggs and season with salt and herbs of choice. (I used just thyme here but if I was making it for myself I would add other things like chilli as well). Then add your oats and mix.
* Step 2
Heat a little oil in a hot pan and pour in your mixture. Cook for a few minutes and then turn over till golden on both sides. THAT'S it!!
The oats give this a stronger more versatile texture perfect for little hands or messy eaters who want to pick things up. It's a great way to introduce oats to the diet other than as a porridge and a nice alternative to bread.
* Step 3
Remove from the hot pan and add your fillings on one side. My daughter's current favourites are ham and cheese with mayo. Fold over the omelette and serve with cut cucumber sticks or any other fruit or veg you like. Try with carrot sticks, tomatoes or apples.
