Cooking instructions
* Step 1
In a large pot bring some water to a boil, once boiling add your spaghetti and simmer for 10-12 minutes till cooked. Drain and put to one side till needed.
* Step 2
Whilst the pasta is cooking prepare your sauce. Finely chop your bell pepper and onion and add to a medium-hot frying pan with a little oil.
* Step 3
Whilst sauce is simmering away prep your cheese by grating and put to one side. And finally chopping parsley to sprinkle on top at the end.
* Step 4
Normally at this stage, I would add fresh meatballs to the pan and brown but as I didn't have fresh meat only frozen, I popped the frozen meatballs into the oven at 210c for 20 minutes to ensure they were thoroughly cooked through.
* Step 5
Add your tins of chopped tomato to the pan with your onions, reducing the heat to a low simmer, stirring occasionally until most of the liquid has evaporated and the sauce starts to thicken. Add a sprinkle of sugar and salt to taste.
* Step 6
I wanted a smooth sauce, so before combining everything, I poured the sauce into a jug and using a hand blender blitzed the sauce until silky smooth. Return the bow smooth sauce back to your hot pan, add the cooked meatballs and pasta. Make sure that all the pasta is coated in sauce.
* Step 7
If you would like a chunky sauce leave it as is and once meatballs are done, remove from the oven tray and add to the sauce along with your pasta and mix.
* Step 8
To plate. Add heaps of pasta and meatballs to your plate, topped with a generous helping of cheese and parsley. Perfect easy family #dinner
