Egg Ham baked cups with Guacamole
Yummy for breakfast for lunch.
Cooking instructions
* Step 2
Get a muffin tray. You will use 4 slices of ham per muffin cup. First overlay 3 slices of ham around the sides of one of the muffin cups. Then place your 4th slice at the bottom of the cup. Repeat for your second one.
* Step 3
Crack one egg into each of your ham casings and season with your Mixed herbs or Italian seasoning
* Step 4
Bake for 20 minutes or until most of the white is cooked.
* Step 5
Whilst eggs are baking prepare your guacamole. Half, de-stone and remove your avocado from its skins into a bowl. Mash.
* Step 6
Finely chop onion and add to avocado
* Step 7
Roughly chop tomato and parsley and add.
* Step 8
Add as much chilli as you like. Squeeze over juice from your lime. Mix everything and season well.
* Step 9
Once eggs are baked. Serve up with your guacamole and toast.
