Arbi Masala Curry in curd gravy is a delicious Indian side dish that can be served as a side dish. The other way is to Serve with roti or paratha of your choice with yogurt. As Arbi Masala is a dry sabzi, it can be served with the main course.

Cooking instructions
* Step 1
👉Wash arbi in running water 2-3 times. Transfer it to a pressure cooker. Add water till arbi is soaked and then place the lid and pressure cook till 2 whistles. Let pressure release automatically. Peel off the skin of arbi and chop into pieces.
* Step 2
👉Wash peel and grate onion. Likewise, grate tomatoes and make a puree.
👉Heat oil in a wok. Add cumin seeds and when cumin seeds splutter put finely grated onions and saute for 2 minutes. Add ginger and garlic paste and saute till the onion turns golden pink.
* Step 3
👉Add tomato puree and mix. Add salt, red chili powder, turmeric powder, and coriander seeds powder and mix well.
* Step 4
👉Cook on low flame till oil leaves the sides of the wok. Add curd and mix well. Cook for 2 minutes.
* Step 5
👉Now add water slowly and stir. Add Kasuri methi and green chili cut into 2 pieces. Let it come to a boil. Let it simmer on low flame till it turns thick. It may take 6-8 minutes.
* Step 6
👉Add chopped arbi and mix. Let it simmer on low flame till arbi mix up well with masala curry.
* Step 7
👉Serve hot garnished with chopped coriander leaves with chapati and raita.
