Gajar ka Halwa is an Indian Carrot Pudding that is made with carrots, milk, sugar, ghee, cardamom, and nuts. It's delicious with a cup of chai. This recipe is widely popular in Northern India and is made during the winter harvest months, parties, and festivals.

Cooking instructions
* Step 1
1. Peel, Wash and chop carrots and transfer it in a heavy bottomed karahi. Cook it on low flame till its water dries up.
* Step 2
2. Now add 1 litre milk and let it simmer on low flame till milk is absorbed by carrots. This process takes 40 - 50 minutes. In between keep stirring and mash it with a masher.
* Step 3
3. Add green cardamom powder, dry fruits and melon seeds and mix well.
* Step 4
4. Add ghee. Mix well. Cook on low flame for 5 minutes
* Step 5
5. Now add sugar and stir well and cook till sugar dissolves completely in carrots. Keep on stirring continuously as after mixing sugar carrots may burn if not stir continuously.
* Step 6
6. Serve hot with milk or as a dessert after meal.
