Carrot Radish Pickle

#win #week6 A quick spicy carrot and radish pickle made with seasonal vegetables and spices os favourite winter pickle. This instant pickle is great accompaniment with Indian breakfast, lunch or dinner.

Ingredient

20 minutes
4 tbsp

Mustard oil

2 tsp

Salt

2 tbsp

Rye

1/8 tsp

Asafoetida

Cooking instructions

* Step 1

Wash, peel and chop carrots, radish and turnip.

* Step 2

Boil water in a pan. When water starts boiling add turnip and cook till water starts boiling again. Remove it from boiling water and transfer it in a plate.

* Step 3

Like wise when water starts boiling add choppped carrots and radish and cook till boiling point comes. Remove it in a plate.

Now place all these vegetables in Sun for 3-4 hours to dry.

Heat mustard oil in a wok. Add all the spices and saute for 30 seconds. Switch off the flame and add sun dried vegetables

* Step 6

Now toss them thoroughly so that oil and spices mixes well. Switch off the flame again and saute it for 2-3 minutes. Instant pickle is ready.

When cool, fill it in a glass jar and keep it in sun for 2-3 days. Pickle is ready to serve with breakfast, lunch or dinner.
