#Luchi is a deep-fried flatbread, made of Maida flour. It is a famous breakfast of Kolkata and is also made on durga puja.
Ingredient

Cooking instructions
* Step 1
Add maida in a mixing bowl. Add salt, cooking Oil and 2 tb sp water in it. Mix it thoroughly with hands.
* Step 2
Now add more water slowly and knead a soft and smooth dough. Cover it with damp muslin cloth and rest for 30 minutes.
* Step 3
Now knead the dough again for 2 - 3 minutes and make lemon sized balls. I have prepared 8 balls woth this dough.
* Step 4
Apply cooking oil on balls and cover it.
* Step 5
Heat oil in a wok. Now roll each ball and drop it in hot oil. Let the luchi puff. Flip the side and fry from other side also. Remove it on a tissue.
* Step 6
Like wise make all the luchis.
* Step 7
Serve hot with alur curry or chana/chhole.
