Pan Fried Fish with Basil Lemon Sauce

I was looking for a way to use up some basil and saw a recipe for basil lemon butter sauce. I tried it and it was pretty good. Very basil. So if you like basil you should like this sauce. Sauce would also be good for vegetables.

Cooking instructions

* Step 1

Dry fish with a paper towel. Mix flour, black pepper, and salt in a large bowl or plate. Dredge fish through the seasoned flour. Shake off excess.

Add oil to a skillet and heat on medium heat. When hot add fish to skillet. Flip fish when cooked 1/2 way. When done remove to a plate. Repeat until all fish is cooked.

* Step 3

Add garlic and cook for 30 seconds. Add chicken stock and lemon. Bring to a boil for 2-3 minutes to reduce liquid. Reduce heat to low and add butter pieces while stirring to melt the butter.

* Step 4

Add chopped basil and mix in. Taste the sauce and adjust if needed. If too tart you can add in a little sweetener like sugar or honey.

Plate the fish and spoon sauce over. Serve and enjoy!
