Thyme and Parmesan crusted chicken and new potatoes
Very very tasty main meal!!!! The flavours are heavenly together. I love thyme and tend to use it a lot. But rosemary would be just as nice #italian #mainmeal #chicken #sundaylunch
Cooking instructions
* Step 1
Get ingredients ready. Wash chicken and potatoes and dry well
* Step 2
Put flour on a plate. Beat 2 eggs on a plate. Mix equal amounts of Parmesan and breadcrumbs
* Step 3
Dip chicken in flour, then egg and then breadcrumbs. Place chicken on a lightly greased baking tray
* Step 4
Put potatoes in a bowl. Drizzle with oil and add any leftover breadcrumb mix. Mix with a spoon
* Step 5
Add potatoes to tray. Sprinkle with thyme. Bake at 200 for 40 mins.
* Step 6
Turn half way and up the heat for 10 mins to brown and crisp up. Yummy :)
