Sun-dried Tomato, Basil & Mozzarella Creamy Chicken

Cooking instructions
* Step 1
Dice the onion and fry on a medium heat using some oils from the sun-dried tomatoes.
* Step 2
Dice the Sun-dried Tomatoes and add to the pan with the Onions. Fry until soft and browned. Add black pepper (a few grinds), salt and mixed herbs.
Remove from the pan and set aside in a bowl.
* Step 3
Add butter and a little extra oil to the pan and fry the diced chicken.
* Step 4
Press garlic, chop Basil and add to the bowl with tomato and onion mix.
* Step 5
Chop mozzarella and grate cheddar
* Step 6
When the chicken has browned, add the mix that you set aside along with the boiling water
* Step 7
Cover and simmer for 15 minutes
* Step 8
When cooked through, add the cheeses and stir until dissolved.
Add the cream.
Reduce the temperature to low and simmer for a further 5 minutes
* Step 9
Remove from the heat and serve with a Keto friendly side dish such as the Gratan, Keto Bread or Cauliflower Rice (see other recipes).
Alternatively serve with Brown Rice or Wholemeal Pasta.
