Pumpkin Hummus on Multigrain bread

#cppassport #cppUAE #toc2 Hummus is such a universal, nutritious, healthy condiment enjoyed with Pita Bread, Falaphel and on its own too. It’s variety is immense and not just restricted to chickpeas though that’s the traditional one

Ingredient

Cooking time :

Preparation time-10 mins, Cooking time-24hr10mins
1 cup

Chickpeas

1/2 tsp

baking soda

1 Tbsp

tahini

as required

Salt

as required

Multigrain bread

as needed

Cherry tomatoes

as per need

Lettuce

Cooking instructions

* Step 1

Soak overnight chickpeas and drain the water. Add to pressure cooker with baking soda and on medium flame pressure cook for 5 whistles. Set aside, depressurise and drain the water but retain it. Peel the chickpeas skin and set aside

* Step 2

Wash and peel the pumpkin, cut into small pieces and boil for 10 mins. Drain and set aside

* Step 3

Add both the Pumpkin and Chickpeas to the blender, add tahini, garlic cloves, 1 Tbsp olive oil, cumin powder, red chilli flakes. Add the boiled water of chickpeas. Blend smooth

* Step 4

Set aside.

* Step 5

On the multigrain bread, spread the hummus on lettuce and one without, add halved cherry tomatoes and drizzle from olive oil, salt and pepper

* Step 6

Enjoy the nutritious and healthy hummus on multigrain bread
