Multicolour Boondi Raita

#boxweek6 Boondi is one of my favourite savoury to enjoy. I usually have as a dessert by dipping it in sugar syrup but today I wanted to make a health one. So made Raita and added Boondi of Besan and Beetroot.

Ingredient

Food ration :

3 people

Cooking time :

Preparation time-10 mins, Cooking time-20 mins
3/4 cup

water

1 tsp

oil

1 cup

yogurt

1/2 tsp

Rocksalt

as per taste

Salt

1/2 tsp

cumin seeds

1 sprig

curry leaves

Cooking instructions

* Step 1

Whisk the yogurt in a bowl well, add rock sat and roasted cumin powder. Whisk and set aside

* Step 2

In another bowl add Besan, oil and slowly water to make neither a thin batter nor a thick. Keep whisking. Add pinch of baking soda and whisk. Batter is ready. Set aside for 10 mins

* Step 3

In a wok heat enough oil and first in high flame and later low flame continuously, take a ladle of the batter and pour onto a spoon with holes and without moving, pour the batter. Slowly the batter will drop like a drops. Without cluttering the wok drop as much can fit. Fry golden in colour and boondis are ready.

* Step 4

Take half of the batter and add Beetroot juice and mix well.

* Step 5

Now pour the Beetroot batter through the same spoon with holes into the hot oil and prepare the boondis. The Beetroot boondis are ready.

* Step 6

Add both the boondis into the yogurt mix.

* Step 7

Prepare a Tadka of heating oil in a wok, add cumin seeds, whole red chilli, curry leaves and fry for 1 min.

* Step 8

Add to the Raita.

* Step 9

For plating add the Raita, add the multicolour boondi’s and drizzle with the Tadka. Enjoy
