Papad is such a great ingredient that can be used in so many ways and not only just roasted or fried. I made Spring roll and can be enjoyed as an anytime snack or party time too. Friends and relatives will not stop at one

Cooking instructions
* Step 1
Chop all vegetables. Boil potatoes and mash. Chop green chilies, garlic, ginger, grated paneer roughly.
* Step 2
In a wok on medium heat, heat 1 Tbsp oil and add cumin seeds, chopped green chilies, chopped garlic, chopped ginger. Sauté for 1-2 mins.
* Step 3
Add chopped capsicum, sweetcorn, and sauté for 1-2 mins.
* Step 4
Add red chilli powder, turmeric powder, cumin powder, coriander powder, sauté. Add grated paneer, mashed potatoes, salt. Mix well. Add Anardana powder, Aamchur powder, kasuri Methi powder. Mix well.
* Step 5
Add mint leaves and stir well. Set aside to cool
* Step 6
Take a Papad and dip in water for 10-12 seconds on both side. Dap kitchen towel to dry and add the filling in the centre
* Step 7
Roll as you would for a spring roll, tucking the sides, complete the batches. If any papad tears off while rolling, wrap with another papad to make the roll.
* Step 8
Heat oil in a wok and carefully add the Roll. Don’t clutter the wok. Gently turn sides once fried on one side. Set aside
* Step 9
Plate with lime wedges, chilies and tomato ketchup, and coriander - mint chutney. Enjoy
