Carrot & Turnip Pickle

Indians love pickles of all kinds be it vegetarian or non vegetarian. In winter root vegetables has its own taste and a pickle of root vegetables is ideal to enjoy with any kind of main meal. I made with carrot and turnip and both are root vegetables

Preparation time-10 mins, Cooking time-20 mins
Cooking instructions
* Step 1
Wash and peel the carrots and turnips. Cut the carrots lengthwise and turnips in small cubes. Set aside.
* Step 2
Grate the ginger and garlic.
* Step 3
In a wok heat mustard oil until smoking hot. Switch off the gas and add grated ginger and garlic and light the gas. Stir for 30 seconds.
* Step 4
Add the ginger and garlic paste and cook for 7-8 mins. Add the jaggery powder mixed with Malt vinegar.
* Step 5
Add garam masala powder, mustard powder and red chilli powder, add salt. Mix well. Add the carrots and turnip and mix gently. Switch off the flame. Set aside to cool
* Step 6
Add to air-tight container and enjoy.
