* Step 1
In a bowl, add rice, beans, tomatoes, cucumber, capsicum, radish and mix everything well.
* Step 2
In a separate bowl, mix together Lemon juice, salt, pepper, and olive oil.
* Step 3
Add this dressing all over the rice and beans mixture.
Mix together very well.
* Step 4
Now place a few lettuce leaves in a serving dish.
Add all the rice and beans mixture.
Add some Corriander leaves and serve.
